2. Pasteurize

At the beginning of our day, we pasteurize our milk and pump it into our OST vats.  Here is a picture of our pasteurizer. It is an HTST which stands for High Temperature, Short Time.  It heats the milk up really fast and holds it at that temperature for a few seconds before it is sent off to the vats.

Milk temperatures and cleaning temperatures are kept track of very carefully.
