9. Packaging

Here is where the cheese gets wrapped up and ready for the curing. Below we have our 2 lb wheels getting packaged in their red and clear bags.

The "Baby" Swiss needs a little support to keep its shape, so we give it a sleeve to help it through the developmental stage.
