8. Brining

After cutting the cheese will go into our brine. Our brine is made from just salt and water.

2 pound wheels 2 pound wheels 2 pound wheels

The top of the cheese is covered with salt while it is in the brine to keep it from drying out. The cheese will stay in here for a certain amount of time depending on the size of the cheese.

2 pound wheels 2 pound wheels 40 pound blocks

This adds a lot of flavor to the cheese and helps to preserve it.
