Tom Weber (The Big Cheese)

Tom is our head cheese maker (Big cheese) with over 30 years experience in cheese making. He grew up on a dairy farm in Wisconsin and so he is well learned in the dairy and cheese manufacturing fields.

In the late 1970's, Tom worked with a man named Eldore Hanni as an apprentice cheese maker in southwest Wisconsin. Eldore saw an opportunity to make cheese with Amish farmers' milk in central Pennsylvania and moved his cheese making business to Penn Cheese's current location. Tom moved east with Eldore to help start up his new company. The company has since stopped using milk from the Amish but still uses milk that comes from central Pa.

Eldore has started up his own business called Farmstead Fresh helping farmers make cheese right on their farm. Tom has remained at Penn Cheese for all these years continually trying to perfect his recipe for Swiss, and more specifically Baby, Lacey, Domestic, and Hot Swiss cheeses. He is a licensed and certified Wisconsin cheese maker as well.
